Wine–making
Maceration in contact with skins, but removing stalks, for about 25 days. Daily bâtonnage, even twice a day, both with open and closed barrels.
Alcoholic fermentation
In temperature-controlled stainless steel tanks (max 20°C) by using the best and most selected natural yeasts
Ageing
In stainless steel vats for 3-4- months.
Quick passage in oak barrels.

In May – June

6 months in bottles stored in the wine storage area of the winery

Organoleptic properties
Colour: ruby red
Bouquet: vibrant, rich with hints of cherry, redcurrant and mixed berries
Flavour: balanced, soft, rich in black cherries and mixed berries
Pairing
Ideally served with savoury dishes, Tuscan cold cuts, slightly fat meat, even grilled, and mid-aged cheese. Service temperature: 16°- 18°C in long-stem red wine glasses.
